Where’s the Ramen?-Gluten Free Style

Lets talk about ramen! We like ramen, whether from a restaurant or going into our pantry for making it at home. It is really a comfort food. A problem though is the most common ingredients in ramen is wheat, which doesn’t work in a gluten intolerant household. But we are always on the lookout for gluten free products around here, so when we found a gluten free Ramen at Costco we had to try it.

The Product: Lotus Foods Organic Millet and Brown Rice Ramen.

This product is gluten free, vegan and organic. Now according to their website FAQ it says to refer to the product packaging about details of it being gluten free. Now with examining the package and the website, I don’t think its certified gluten free. So if you are celiac or have an allergy please be careful as it may have cross contamination.

Okay with any gluten free product, it has its quirks so lets go through when we made it ourselves of what we found.

I decided to make a basic ramen soup. (Details are below if you are interested in making it yourself) We got gluten free vegetable soup broth, veggies and some pork.

One great feature about this soup is it’s like an instant noodle, it only takes 4 minutes to cook. I was quite impressed on that. The instructions say to rinse the noodles, which we did since this was the first time making it. I heated up the broth and vegetables separately then so I could follow the instructions. We fried up our pork and sliced it up

With the 4 minutes and rinse, the noodles held up at this point and stayed together. So this is a win for me.

After cooking all ingredients and putting it all together it looked wonderful!

Now taste test! It tastes quite good. You can tell its millet but overall it doesn’t have much of a taste. Which works good if you are using different flavours in your ramen. We did notice some noodle deterioration by the time we went for seconds. They keep their round shape but they start to break down into smaller pieces.

In Review: We like Lotus Foods Millet and Brown Rice Ramen. It holds together for a good period of time and tastes good. It is fast to make, which helps if you are eating lunch at home. And it’s something you can have in your pantry, which is important during these times.

Quick Ramen Meal:

  • Lotus Foods Organic Millet and Brown Rice Ramen
  • Campbell’s vegetable broth (This one is gluten free)
  • Frozen cauliflower and Broccoli mix
  • Frozen Peas
  • Pork Chop (marinated in gluten free soya sauce and minced garlic)

Cook ramen as instructed.
In another pot heat up broth. Once broth is bowling, add in frozen vegetables and book as instructed. Grill pork until it reaches acceptable temperature. Cut pork into half inch strips. When vegetables are done, put in the rinsed ramen into pot with broth. Serve into bowls and add pork to bowl.
