Whether you are trying to plan meals for a week, are in self isolation or in quarantine, by the end of the week when you start to have meals more canned based what do you do? How do you spice things up? Well let me share with you what our current favourite meal is.
We really like curry based dishes, but I am not so good at making them. So going out to dinner for them makes it a really special meal. Currently with the pandemic that is not always possible. So while shopping at Superstore we found an option that we can make the dish at home. We found bottled Butter Chicken and Tikka Masala sauce. There were a few different brands available. We like to get the one on sale, though typically we tend to get the PC brand.
So here are the ingredients for our meal.
- Tikka Masala or Butter Chicken sauce
- Minute Rice
- Coconut Oil
- Unsweetened Shredded Coconut
What I like about most of these ingredients is that they can be stored for a period time so you can make a delicious meal from your emergency pack.
The only ingredient that needs to be refrigerated is Paneer. We recently discovered that you can buy Paneer at Superstore or Walmart. I absolutely love Paneer as another option to chicken. Plus I love cheese.
So details about the meal.
We heat up the Tikka Masala or Butter Chicken in a sauce pan. Once it is heated up we add in the Paneer while making the rice. Though jasmine rice is my favourite, Minute Rice is the easiest and quickest so its great in an emergency. Instead of Butter I like to add Coconut Oil, then right before it starts to boil I add in shredded coconut. This gives the rice some flavor and an easy coconut rice choice to your meal.
